How to make: blueberry pancakes

A pancake is for life, not just for pancake day!


125g self-raising flour
1 tsp baking powder
1 egg
150 ml milk
25 g (1 oz) butter, melted
100g (3 1⁄2 oz) blueberries
1 tbsp olive oil
maple syrup and crème fraiche to serve


In a large bowl mix together the flour and baking powder.

Whisk together the egg and milk and whisk into the flour until smooth.

Whisk in the melted butter then stir in 75g(3oz) of the blueberries.

Heat a frying pan with the olive oil and spoon tablespoons of the mixture into the pan. Cook for 3-4 minutes until golden underneath then flip over and cook for a further 2-3 minutes. Repeat with the remaining batter.

Serve with a few more scattered blueberries, a dollop of crème fraiche and a drizzle of maple syrup.This-Month's-recipes-blueberry-pancakes-2
