New Head Chef, Carl Long, steps up to the hot plate...

Set on the idyllic banks of the River Nene on the outskirts of the historic market town, Oundle Mill is a chic yet sympathetic conversion of a traditional watermill into a small boutique hotel and restaurant – one of the select collection of characterful ‘restaurants with rooms’ owned by Agellus Hotels.

The restaurant – which has established a strong reputation for the quality of its food – has just announced the appointment of new Head Chef, Carl Long, who takes over from Gavin Austin – off to pursue new challenges after a hugely successful two and a half years.

New Head Chef Carl is no stranger to the venue, however. He will be familiar to the Mill’s loyal guests, too, having worked at Oundle Mill for two years as Gavin’s Sous Chef before being promoted to the new position. Carl – who started in this, his first Head Chef role at the beginning of April – is keen to further develop the Mill’s menus and build on the great achievements and reputation that the Mill has attained in the past few years. ‘This is a great opportunity for me to develop myself as a chef, to improve my style and put my mark on Oundle Mill,’ he says.

Saying that, his CV is already pretty impressive. His flair and talent for cooking saw him successfully enter the prestigious Roux scholarship and reach regional finals, and he has worked with some of the most renowned chefs in the country – including three years under Head Chef and owner, Steve Drake, in the Michelin starred restaurant Drake’s in Surrey. He has also spent time in France developing his culinary skills.

‘I’m in this profession because I love doing what I do,’ he says. ‘My passion is to cook excellent food, using quality seasonal ingredients, and using local producers whenever possible.’
