How to make: spicy chestnut and apricot stuffing

A healthy alternative to sausagemeat stuffing, with low fat chestnuts and iron-rich dried apricots.

Serve 4-6

Ingredients

3 tbsp olive oil
30g butter
1 onion, peeled and diced
2 cloves garlic, peeled and chopped
½ tsp chilli flakes
75g dried apricots, diced
200g vacuum-packed chestnuts, chopped
100g wholemeal breadcrumbs
1 tbsp thyme leaves
zest of 1 lemon
seasoning

Method

1. Preheat the oven to 200C (400F) Gas Mark 6.

2. Heat the oil and butter in a frying pan and sauté the onion, garlic and chilli flakes on a low heat for 5-6 minutes. Stir in the remaining ingredients and mix really well.

3. Spoon into a greased ovenproof dish and bake for 20-22 minutes, until golden.
