Super Broccoli

A study published this month found that a key cancer-fighting chemical in broccoli and cabbage cannot be easily absorbed in a pill. Cruciferous vegetables like broccoli contain high levels of glucosinolates – compounds associated with reduced risk of cancer. The researchers found that an enzyme in the food helps to break down the glucosinolates into sulforaphne – known to be anti-cancerous and a powerful anti-inflammatory.
