Healthy Eaton Mess

Eton Mess is normally made with lots of whipped cream –substitute this for bio natural yoghurt and you have a fairly healthy dessert! And you can mix and match the fruits you like, they all taste great like this – blueberries, strawberries, raspberries, blackberries etc.

Serves 2

Ingredients

20g (3/4 oz) meringue
125g (4 1/2 oz) fresh berry fruits (chop strawberries into quarters)
150g (5 1/2 oz) natural bio yoghurt

great for a summer treat

Method

1. Break the meringue into smallish pieces and place in a bowl.

2. Add the fruit and yoghurt and mix gently.

3. Serve in pretty glasses
